È sicuro abilitare WP_DEBUG su un sito attivo?

Solo con WP_DEBUG_DISPLAY impostato su false. Da solo, WP_DEBUG stampa notice e warning di PHP — inclusi i percorsi assoluti dei file del tuo server — direttamente nelle pagine che i tuoi visitatori caricano. Quasi ogni tutorial ti dà quella riga e si ferma. Abbinalo a WP_DEBUG_LOG e WP_DEBUG_DISPLAY su false ed è sicuro.

Dove finisce il log di debug di WordPress?

In wp-content/debug.log di default. Vale la pena sapere: su molti host quel file è pubblicamente scaricabile — chiunque può richiederlo in un browser. Puoi invece passare un percorso a WP_DEBUG_LOG e scrivere il log sopra la web root, cosa che questo strumento genererà per te.
